This apple and nut salad is healthy and refreshing, and it packs a nutritional punch you can feel good about.
Apple and Nut Salad with Cinnamon
3 medium red apples (or any sweet variety), chopped
3 medium Granny Smith apples (or any tart variety), chopped
1 cup raw pecans, chopped
2 green onions, chopped
½ cup dried cranberries, preferably with no sugar added
¼ cup light olive oil
3 tbsp honey
¼ cup orange juice, preferably fresh squeezed
1 tbsp orange peel, grated
¾ tsp cinnamon
¼ tsp pepper
1. In a large bowl, combine the apples, pecans, onions and cranberries.
2. In a separate bowl, combine remaining ingredients. Pour this over the apple mixture and toss to coat. Refrigerate 1 hour before serving.

3 lbs medium carrots, halved lengthwise
2 tbsp minced fresh thyme or 2 tsp dried thyme
2 tbsp olive oil
1 tsp salt
1. Preheat oven to 400°F.
2. Combine olive oil, thyme and salt. Pour over carrots and toss to coat.
3. Spread carrots over two baking pans. Roast 20-25 minutes, or until tender.
